鮮乳及乳製品在人類生活中扮演重要角色，乳牛學重在教導學生生產經營的基本概念，經營過程中如何降低生產成本，增加乳及其副產品的附加價值是一重要課題。另外學生可透過現場觀摩及善用網路資訊獲取新知並與乳業先進國家接軌，對本省乳業發展有其正面意義。
