本課程的主要目的在引導學生認識國際乳業與本土乳業的現況，教導學生乳牛產業生產的基本概念，了解經營乳牛事業所需具備的知識與觀念。為培養學生將來可能進入產業界服務所需具備的專業能力，將以實務應用知識為主要講授內容，並配合介紹先進乳業技術，讓學生在未來職業生涯有學以致用的機會。
